Mellow Mushroom, an Atlanta-based pizza chain, will open its second St. Louis-area location at 4716 Mid Rivers Mall Dr. in St. Charles this February.
The 6,100-square-foot space, which can accommodate about 200 guests, will have an outdoor patio and dining area, as well as a courtyard with games and activities that can be rented for events.
Franchisee Tammi Hilton invested about $3.5 million to build out the space, which was done by Knoebel Construction. Oculus served as the architect.
Hilton is currently hiring for more than 100 positions prior to the restaurant’s opening in mid-February. It is holding several hiring events prior to its opening, including Monday and Tuesday at the St. Charles Community College from 9 a.m. to 4 p.m.
Mellow Mushroom is hiring for positions such as assistant manager, dishwashers, service managers, prep cooks and others.
The first St. Louis-area Mellow Mushroom opened at 3811 S. Lindbergh Blvd. in August 2016. A total investment to franchise a Mellow Mushroom location ranges from $1.6 million to $4.5 million, according to the company website. The pricing includes between $78,000 and $88,500 that must be paid to the franchisor.
